Introduction

India and tea have a great relation. India is one of the major tea producing country. Every year on 15th December, it is celebrated as the International Tea Day. When we look in the history of this day then International Tea day was started in India in 2005, initiated by workers of the tea industry to bring attention to inequality among-st workers and plantations worldwide. Every year, they bring to light various issues related to the tea industry.

Sipped and enjoyed by millions/ trillions of Indians, masala chai/tea, is a constitute of spices, sweetness mixed with milk, is now popular beverages around the world.

The Most popular seller of this chai is chai wallahs, or tea vendors, who pour the tea from there big kettles into small cups(mud cups commonly known as kulad).

In America, it is been incorrectly shortened the name to chai (which means simply “milk tea”); masala refers to the combination of different spices, which includes cardamom pods, cinnamon, ginger, cloves, pepper, and star anise.

Ingredients

  • 4 cloves
  • 2 cardamom pods
  • 1 - 1 1/2 Cinnamon stick, broken into pieces or powder
  • 1/4 teaspoon fennel seeds
  • 2 Cups water
  • 1/4 teaspoon grinded ginger
  • 1?/8 teaspoon black pepper
  • 1 cup milk
  • 2 tablespoons sugar or as per taste

Instructions

  1. Take a mortar, crush the cloves, cardamom pods, fennel seeds and cinnamon( if you don;t have cinnamon powder).
  2. Add water in a small saucepan and add the crushed spices along with ginger and pepper and bring to a boil.
  3. Once it start boiling properly, add tea to it and again bring to a boil.
  4. Next step is to add milk and sugar to the pan and lastly bring it to boil again and again.
  5. Remove it from the heat ans stir the tea/chai, then strain it into into teacups. Enjoy!
