Perugu Charu (Andhra Style Curried Buttermilk)

Introduction

Perugu Charu or  Majjiga Pulusu is a tempered Andhra Style Butter Milk recipe which is super spicy but tastes awesome! It can be savored with rice. Here is how to make it.

The process for making Perugu Charu remains the same. However, it is tempered with the Tadka or talimp using mustard seeds, curry leaves, chana dal, urad dal, onions, green chili, tomato and for more spices I have added red chili as well. It will give a good taste as well as a tempting color to the dish.

Ingredients

  • Whisked Curd - 1/2 to 1 liter
  • Onion - 1 large chopped
  • Tomato - 1 small chopped
  • Salt - as per taste
  • Red chili - 1/4 tbsp
  • Green chili - 3-4 Chopped or sliced
  • Water
  • Butter - 1-2 tbsp
  • Garlic - 4-5 chopped
  • Kari leaves - 10-11
  • Coriander - 1/4 cup chopped
  • Mint leaves - 3-4 chopped

Instructions

  1. Heat up the pan with butter, put some mustard seeds, garlic (chopped), kari leaves, and green chili.
  2. Now add, 1 big sliced onion and along with turmeric and salt as per taste to it, and fry it till the raw smell of onion goes off.
  3. Next step is to add 1 small cubed tomato to the fried onion. Fry the same till the tomato ? goes soften.
  4. Next, add chopped 1/4 cup coriander and 3-4 small leaves mint to it. Mix it properly and leave for 2-3 minutes
  5. Now add Whisked curd to it and mix it properly. Give one boil and add Water as per the consistency you like.
  6. Lastly add black pepper to it and remove the curry from stove.
  7. You can add red chilli powder too that is optional. Mix the whole completely and serve it with love.
