Vankaya Tomato Pachadi

Vankaya(Brinjal) Pachadi is another delicious Andhra dish which is very similar to baingan/brinjal bharta. It’s a curry of grilled brinjal (roasted or directly cooked on a gas burner) sautéed with cumin seeds, garlic, chilli, curry leaves. For tangy taste, we have added tamarind to it. This is also known as roti pachadi very famous in Andhra Pradesh.

Ingredients for Vankaya Tomato Pachadi
Step 1: Take a pan, add oil, jeera(cumin seeds, chopped green chilli, garlic, chopped tomato, chopped brinjal and raw salt.
Step 2: Mix the above all and fry the same till the time brinjal started getting soft.
Step 3: Once the brinjal is soft, off the stove and leave it to cool down.
Step 4: Take the grinder jar to add the above mixture and tamarind paste to it. Grind the same till it became a smooth paste.
Step 5: Take the paste out from the jar and serve it with the hot rice or can be used as pickles with any curry.
